Chicago is considering a proposal to trim fatty goose and duck livers from restaurant menus, with the City Council's public-health committee considering the outlawing of foie gras. This proposal didn't arise out of concerns for the health of the public, but the health of the goose.
"Our culture does not condone the torture of innocent and defenseless creatures, and we as a society believe all God's creatures should be treated humanely," said Alderman Joe Moore, addressing the committee. Holly Cheever, a veterinarian who spoke at the Chicago hearing, said she thought the city should "take a stand against such outrageous and heinous cruelty" by banning the sale of foie gras. "Even in the worst cases," Ms. Cheever said, referring to treatment of other animals for food production, "nothing touches this in terms of the cruelty involved."
